GLUTEN-FREE BLACK BEAN BURGERS
The same great recipe as our other black bean burgers, only with the superfood kasha, buckwheat, taking the place of spelt and rye flour. We can barely make these fast enough to keep up with demand and are working with Vermont growers to bring in more buckwheat for milling in the 2011 season. Perfect for gluten-free folks or for people looking for an extra gram of protein and a bit more vitamins in each patty.

HUMM-ISH
A localized take on an age-old recipe. Since chickpeas don’t grow well in our neck of the woods, but hummus is a food that was so dear to me, I took some time to develop a surrogate bean spread that lends the same savoriness and texture to all the cuisines hummus is at home in. *This is another product we’ll be doing seasonal variations of.

They’re not quite my Great-Grandma Constantino’s recipe, but I’ve not had a vegan alternative that left me as satisfied as these. I mash these up with garlic marinara to make my calzone filling, top off some homemade pasta with them, and have been known to throw them in a fresh-baked baguette at the farmers’ market–sooo good.

REFRIED BEANS
I haven’t met many folks that don’t appreciate a good bean burrito or even just a hot plate of refritos with vegetables and rice. Fresh cilantro, hot peppers… yup. In that same breath, I also haven’t met many folks that make their own refried beans, and of those that do, I don’t know a single one that’s made them of wholly Vermont-grown ingredients. Until now.
Since Vermont’s climate and soils are well-suited for all but the cumin involved in making the perfect pot of refried beans, I figured I’d do you all a favor and connect the pre-existing dots.
